That’s how it’s done:

In a blender, mix 400 grams of cottage cheese, 1/2 cup sliced red onion, 2 sprigs of freshly chopped parsley, 2 teaspoons of fresh lime juice, 1 teaspoon salt, 1/2 teaspoon ground garlic and 1 teaspoon turmeric. Add 1 cup of diced avocado and briefly toast the blender two to three times to coarsely mix in the avocado. But she should not be quite creamy!

3. Cheesecake Brownies

4. Baked Oatmeal

Only Overnight Oats or Proats for breakfast? Nope, on the weekend it may also be something more. How about baked oatmeal, for example? That’s really nice and is not quite as carbohydrate-heavy with cottage cheese.

That’s how it’s done:

Preheat the oven to 180 degrees and grease a round pie-shaped (about 23 cm). Whisk one egg, 1/3 cup cottage cheese, 1/3 cup vanilla yogurt, 1 tsp honey and 1 pinch of vanilla extract in a large bowl with a fork. Add 1 1/2 cups of coarse oatmeal, 1/4 cup coconut flakes, 1 teaspoon of baking powder, 1/4 teaspoon salt and 2/3 cup of milk (optional) and mix. Add 1/4 cup of dried cranberries and add the mixture to the dish. If you want it sweeter, sprinkle chocolate pieces over the crowd.

Bake for 20-30 minutes until the Oatmeal is goldenly baked and the surface is slightly crispy. Let cool for 5 minutes and serve warmcut into pieces and pimp with fruit or vanilla ice cream

5. Chocolate Cookies

Biscuits with cheese do not always end up as cheese biscuits, it is also chocolatyand in the form of funky delicious chocolate cookies.

That’s how it’s done:

Preheat the oven to 180 degrees. Mix 3/4 cup flour (of your choice), 1/4 cup unsweetened cocoa powder, 1/4 tsp salt and baking powder in a bowl and set aside. Add 6 tablespoons soft butter, 3/4 cup sugar, and one egg. Add 1 tsp vanilla extract with 1/2 cup cottage cheese and whisk well. Then fold in the dry ingredients and mix everything with a large spoon.

On a baking sheet lined with baking paper, make about 12 biscuits: It is best to portion with a tablespoon and shape small balls.

Bake for 10-12 minutes and sprinkle the finished cookies with powdered sugar. In an airtight box, the biscuits stay fresh for a week.

Wondering if there's such thing as too much chocolate…?🤔 . . I have to admit that I was quite suspicious of wheter or not cookies made out of chickpeas can be any good, BUT since @theurbancanteen managed to make them look sooo delicious, I figured to give them a go. And you know what! They are DELISHHH😍 I mean they are no Oreos, but still a really really tasty alternative if you want to bake something a bit healthier 😗 This recipe is vegan, sugar-free, gluten-free and takes only about 15-20 minutes to make. I combined a few different recipes I found on the internet and here's how it goes: Chocolate chickpea cookies You need: 1 can of chickpeas 3 fresh dates 1 ripe banana 2,5 tbls of cacao powder 2tbls of coconut flakes 3 tbls of tahini 1ts of baking powder 40g of chopped dark chocolate 1. Put the chickpeas, banana and dates (remember to remove the pits) in a blender and blend until smooth 2. Mix in all the other ingredients and place heaped tablespoons of the dough onto a parchment paper covered baking sheet 4. Bake in a 200°C oven for about 12-15minutes (depending on the size of your cookies) PS.
